Mango Habanero Chicken w-Tots

Ingredients

 Portion in a Black Bowl: 10 Tator tots & then place the prepared 6 pieces of chicken on top or side of bowl, cover and label it.
Place in warmer and keep warm until serving time.

Chef Notes:

CCP: Minimize time spent in the temperature danger zone of 41°F to 135°F.
CCP: Heat to 165° F or higher for at least 15 seconds
1. Preheat Oven 400° F No steam, medium low fans
2. Remove Chicken bags from case, open and place frozen chuncks on parchment lined baking sheet.
3. Heat for Approx 12 min. to reach internal temperature to 165°. Do not over cook.
4. Place Tator Tots on parchment lined baking sheet, Heat in oven 350° for 35 min temp reach 165° to be
“Extra Crispy”
5. Set up Mango Habanero sauce in double boiler to heat. Heat sauce in containers using the water bath method.
6. Once chicken and Tots are cooked, transfer them to holding pans.
7. Place inside the warmer to maintain temperature until served.
8. When ready to serve, measure sauce, add to chicken pieces, toss as needed until all chicken is ‘coated.

10. Place in warmer and keep warm until serving time.

CCP: Hold at or above 135°F until ready to serve.
