Vegan Fried Rice


7 cup Rice, cooked, and chilled (2oz)
1/2 cup Vegetable Oil
1 Tbsp Garlic, chopped
4 oz Carrot, small dice
4 oz Celery, small dice
7 oz Peanuts, roasted
1/4 cup Soy sauce, low sodium
1 lb Edamame, cleaned
1 lb Tofu, textured (1/4 inch dice)
1/4 cup Green onion, sliced thin

Chefs Notes

Cook rice day ahead so it chills for next day preparation. Have all ingredients prepped ready for cooking, (this is called “Mise en Place”) this can be day ahead. This helps in the timing on the production day.
Green Onions, 1 bunch equals ½ cup approx.
