#8 scoop Cheese and enchilada sauce mix

Chef Notes:

1. Mix cheese with enchilada sauce.
2. Use a #8 scoop to portion mixture onto a flour tortilla. Leave open faced.
3 Heat in 300° oven for approximately 8 minutes until cheese is melted.
4 Fold quesadilla in half and wrap in foil.
5. Place in warmer and hold at 135 deg. until service time.
